To celebrate the upcoming release of Pixar’s Brave, we’ve come up with a pretty awesome cupcake recipe for chili chocolate and ginger cupcakes, we had to show some love to Pixar for putting a feisty ginger princess at the centre of their film.
The recipe itself is pretty straight forward. Preheat the oven to 350 F, combine everything, except the chocolate chips, in a large bowl and mix until smooth. Then stir in the chocolate chips. If you’re feeling brave (see what I did there?) add a bit extra chili powder to give it a real kick. Spoon the batter into the cups and bake for 20mins.
You could make your own frosting, but if you’re lazy, like me, then use Betty Crockers vanilla frosting! Simple and delicious. Spread some of this on the cupcakes when they have cooled. Grate some fresh ginger on top of the frosting to complete it. Now lets just eat cupcakes and count down the days till the movie hits our screens!
